Quinoa Black Bean Salad

directions

  • Cook the quinoa in the water. Allow to cool slightly.
  • In a large bowl, combine the oil, lime juice, cumin, coriander, cilantro and scallions.
  • Stir in the beans, tomatoes, bell peppers and chilies.
  • Add the cooled quinoa.
  • Season with salt and pepper to taste.
  • Serve cold.

  1. It’s just my husband and I. If I make this recipe as stated for 6 servings. I always like to have leftovers for another night only. Would this serving of 6 be to much?

  2. So easy and good to make. I used canned tomatoes and rotel but am excited to make this with fresh tomatoes, I'm sure it will be even better! We also made burritos out of this; put the salad in with some cheese (warm it up in the microwave or eat it cold - great both ways!) and add some sour cream. Very good!
     
  3. I didn't have scallions, so I used some chopped red onion. I added a little extra cumin and a dash of chili powder. This is excellent over baby spinach or as a dip with tortilla chips. Use it as a salsa in a wrap etc. DELICIOUS! Just don't try to eat it right away or you will be very disappointed. This needs several hours in the fridge for the flavors to meld & build. Definitely use FRESh ripe tomatoes and hot peppers! Canned=blech!
     
  4. What a tasty little salad. Easy to sub various things depending on what you have on hand. I love the mix of flavors as listed in the recipe, but I can see experimenting as well. Thanks for posting.
     
  5. This salad is amazing! It takes no time at all to make, and it's a great way to use up any leftover quinoa (or couscous or even rice) that you have on hand. I thought that all the flavors were perfect together. I'll be making this again and again as a healthy side dish!

Tweaks

  1. I chose to omit oil. Added 1/3 cup white quinoa to 2/3 c red quinoa and 2 cups water flavored with 1.25 t. knorr tomato chicken broth granules. I added tri-beans, as that's what I had.
     
  2. My husband and I loved it very much! I'm still getting used to my vegeterian diet AND I don't have too much tolerance for jalapenos but I still went for it as prescribed and t'was delicious! However, I did use parsley instead of cilantro and I must say...stick to the cilantro...perfect herb for this dish! Thanks for sharing!!
     
  3. This is a wonderful side dish/appetizer especially for summer parties. Save yourself some chopping and use Rotel instead of fresh tomatoes and chiles.
     
  4. So very yummy! Especially paired with guacamole! I changed it a bit though to suit my tastes. I added 1 tsp of agave syrup (really recommend this!) and used 1 tsp each of cumin and coriander, because I like it spicy. Didn't include bell pepper since I didn't have it at home, but I will certainly do it next time! I also substituted red onion for the scallions. I will make this again soon!
     
  5. I rinsed and toasted the quinoa first; eliminated the bell peppers and subbed fresh corn instead; and drained and deseeded 6 romas for the 4 cups of diced tomato (oh, I also doubled the entire recipe when i made it for a function). This was such a refreshing spring/summer salad! A definite keeper!! Thanks so much for sharing - a real nice side dish to have in the recipe book!
