Pulled Pork Sandwich

  • In a heavy skillet, combine pork with just enough water to cover. Add the vinegar, barbecue sauce and hot sauce. Bring to a boil and simmer over medium heat, covered until meat pulls apart, about 50 minutes.
  • Remove pork from the sauce, shred and set aside.
  • Simmer the sauce until it reaches the desired thickness.
  • Stir the pork in the sauce and spoon onto hamburger buns.

  1. Great way to use up leftover pork roast. I wasn't sure of the proportions so I used about 1 1/2 pounds of cooked pork and doubled the sauce ingredients. This ended up making about 6 large stuffed sandwiches. I had no trouble cooking and shredding the meat; the cooking time was perfect and the meat was tender and shredded very easily. I boiled the sauce down for about half an hour after that and it was still too thin. So I poured most of it out, then reheated the shredded pork with additional barbecue sauce and hot sauce.
     
  2. Following your recipe burned the crap out of the meat (and my pan). Did you mean for us to simmer on MEDIUM heat, as written? If so, maybe you could post a picture of how much water, because the meat was covered in mine... :(

  4. This was a good recipe to change my leftover pork into something totally different. I sauteed some onions and added that to the sauce which I doubled. The BBQ sauce that I used was a bit on the sweet side so I'll try a different BBQ sauce next time. Thanks for the easy recipe!
