- 1⁄2 cup boiling water
- 1 (2 g) package gelatin
- 2⁄3 cup cottage cheese
- 1⁄4 cup evaporated skim milk
- 1 (2 g) package artificial sweetener
- 2 tablespoons lemon juice
- 1⁄2 cup crushed pineapple

TOPPING
- 1 slice bread
- 1 (2 g) package artificial sweetener
- 1⁄2 teaspoon coconut extract
directions
- Mix water and gelatin in blender.
- Add cottage cheese, milk, sweetener and lemon juice. Blend til smooth.
- Add crushed pineapple.
- Blend.
- Pour into 8 inch pan.

TOPPING:
- Mix all ingredients in blender.
- Sprinkle over filling and refrigerate 24 hours.

I originally tried this recipe out because I was looking for a homemade desert that I could use in my job. All of the foods I prepare at work are for diabetics and elderly people on special diets. This cheesecake has some appealing flavors to it and is simple to make. It would be easy to prepare in the large quantities that I would need.
