Chicken Popeye Soup ( Chicken and Spinach Pot Pie Soup)

"Well This is my creation in my first RSC contest. After thinking about it, I went into the kitchen and made it. When it came time for my DH to give it his review, HE really liked it! It is loaded with flavor. Rich and creamy. The crust served on top of the soup makes it extra good! Enjoy."

  • In a small fry pan add olive oil, onion, portabello and celery.
  • Cook till soft, set aside in into another bowl.
  • In the same pan, saute chicken pieces with a little olive oil till done. About 10 minutes.
  • In stock pot add the chicken stock, 3 tablespoons of the chicken bouillon, and cubed chicken. Cook about 10 minutes.
  • Heat to a soft boil, reduce heat and add the onion, mushroom and celery mixture, and the powdered milk.
  • Add the spinach and basil.
  • Simmer just till spinach and basil are limp, about 5 to 8 minutes.
  • Add cheddar cheese, stir til melted.
  • Bring back to a soft boil.
  • Add corn starch in 1/3 cups cold water, slowly add into the chicken stock.
  • Stir till all is thicken.
  • Crust:

  • In bowl, add butter and flour till like small peas.
  • Add enough water to make a nice pie dough.
  • Roll out on floured board and cut into desired shapes, place onto cookie sheet, bake till light brown.
  • Let cool about 15 minutes.
  • To serve:

  • Ladle into bowl.
  • Place pieces of the crust on top of the soup.
  • Enjoy.

  1. Very good, just what I was looking for! I added garlic, broccoli and mozzarella to the mix (and more seasoning), but otherwise followed the recipe. It's delicious- and I'm thinking it will be even better tomorrow. :9 Thanks!
     
  2. We enjoyed this soup tremendously. It was great for a cold winter night. I love that it has spinach... always good to sneak in a new veggie for the kids. My 9 year old enjoyed making it with me. We used a refrigerated pie crust and cut out butterflies to decorate our dinner. Also, we used powdered creamer, as we had no powdered milk. The soup was creamy without being too thick. Delicious!
     
  3. The flavor of this soup is outstanding and both DH & I really raved over this soup. It is a mild flavorful, creamy, cheesy blend of so many good ingredients. I thought it reminded me of a really good combination of cream of celery and cream of mushroom soup. The spinach isn't overpowering in this soup...the chicken & spinach just add to the flavor. The only thing I added when preparing the recipe was a little celery salt & black pepper. I also cut the pastry dough into thin stips with a pizza cutter before baking. I thought the strips added to the visual appeal for serving. I sauted the chicken with the onions, celery, & mushrooms instead of seperately. I found it took far under an hour to prepare this recipe, which is always helpful. =) We loved the flavor of this soup & I will make this again. I do think it will become one of our favorite soup recipes. Great use of contest ingredients michEgan and I'm glad you entered this in RSC #6!!

I love to cook. I also love to garden, both vegetables and flowers are my passion. I enjoy the great out doors, also, looking for new and interesting recipes to make for my family. I love the taste of "Good " home canned produce, expecially when it comes out of my garden! The produce truly is a gift From God, and I am very thankful for it! Hobbies: I live on a mini farm, raising Chickens and turkeys. I also have 5 German Shorthaired Pointer dogs that take up a lot of my time. I also enjoy playing cards and get togethes with family and friends. Health: I'm always looking and researching on what things makes us healthy. I really enjoying researching on line different new products for good health. Somethings I order, just don't pan out, while other, have really helped my health improve. I always try to go the natural way.
