ingredients
- 1 leaf iceberg lettuce or 1 leaf cabbage
- 1 slice lowfat swiss cheese
- 1 slice pastrami
- 1 tablespoon grainy mustard or 1 tablespoon sugar-free thousand island dressing
- 2 tablespoons prepackaged coleslaw mix or 2 tablespoons sauerkraut
directions
- Open the lettuce or cabbage leaf on a plate.
- Place cheese on the leaf and top with pastrami.
- Spread mustard or dressing onto pastrami.
- Add coleslaw or sauerkraut.
- Roll up and secure with a toothpick.

We loved these lettuce wraps for a nice, light lunch. I used Romaine lettuce, instead of iceberg, which didn't roll very well due to the thick midrib, but this was no fault of the recipe. Also, I used stone ground mustard and coleslaw mix. These go together very quickly and easily and I will definitely make these again.

Fantastic! I used green leaf lettuce, baby swiss, thousand island dressing, my dad's homemade sauerkraut and roast beef. I can't believe the grocery store didn't have any pastrami! Anyway, this made a great lunch and dinner as I just couldn't get enough! I will definately be eating this again. Thanks!
